First, you’ll make Banana Nut Muffins, featuring whole wheat flour, plenty of mashed banana, dark brown sugar, warm cinnamon, nutmeg and cloves, plus your choice of chopped nuts. A touch of fresh lemon zest and vanilla rounds out the flavours. You’ll learn the classic muffin method of preparing the wet and dry ingredients separately before bringing them together, and why not overmixing the batter is so important for producing tender muffins.
Next, you’ll make Carrot Bran Muffins, combining whole wheat flour and natural bran with ground flax seed, freshly grated carrot and warming spices. Applesauce, milk, eggs, canola oil and fresh lemon juice create a hearty batter that bakes into 12 generously sized muffins. Once again, Chef Dez will demonstrate proper mixing technique and how to combine your ingredients just enough to achieve the texture you’re looking for without overworking the batter.
