Early Kitchen Formation

Chef Dez's origin as a chef traces directly to a worn wooden footstool and flour-dusted countertops in his mother's kitchen. While other boys his age gravitated toward team sports, Chef Dez found his team at home - standing beside his mother, apron tied, dragged stool beneath his feet to reach the counter. "There I would stand upon the flour-dusted crevices as she secured my apron, readying me for our next culinary adventure," he recalls. He consistently chose kitchen time over outdoor play.

This early exposure did more than teach technique. It embedded food preparation as identity, not hobby. The passion Chef Dez inherited from his mother became the foundation of everything that followed. He describes the moment plainly: "I prepared my first full gourmet meal... when I was just thirteen years old... the rest is history."

PROFESSIONAL DEVELOPMENT AND CREDENTIALS

 

Chef Dez has earned a Red Seal Chef Certification - one of Canada's highest standards of culinary competence. This credential required thousands of hours cooking and rigorous examination, but Dez consistently frames his real education as happening in restaurant kitchens where he worked "long hours" sharpening skills alongside established Canadian chefs.

His professional journey moved through multiple channels: restaurant kitchens, private chef work, cooking instruction, television appearances, and live cooking shows. He considers himself a Chef for the home cook - No froofy pretentious displays with wild ingredients - Just outstanding restaurant quality food that looks, smells, and tastes great.

The career accumulated impressive markers: Author of ten books, host of a bi-weekly food column "Chef Dez on Cooking" distributed in newspapers across Canada & Washington State, consistently SOLD OUT Culinary Classes, a rapid growing social media presence, and countless TV and Live Coking Show performances.

THE TURNING POINT - RETURNING TO ROOTS

 

Despite accumulating professional success and credentials, Dez eventually recognized a misalignment between his work and his core purpose. The trajectory through television, culinary positions, and public demonstrations was "exciting and rewarding," but something fundamental was missing.

The insight that changed everything: helping everyday home cooks build kitchen confidence was "the real dream come true." This represented a return to the original experience with his mother - the joy of standing beside someone in the kitchen, making food preparation accessible rather than intimidating.

Dez articulates his philosophy clearly: "Great cooking is not about fancy ingredients or complicated recipes - it's about understanding simple techniques and trusting yourself in the kitchen." This directly contradicts much of the culinary industry's direction toward complexity and spectacle. He explicitly rejects "fancy foam towers on square plates" and "influencer glitter tacos" in favour of practical family meals.

THE MISSION SHIFT TO EDUCATION

 

Dez launched the Chef Dez Academy as the vehicle for this refocused mission - online cooking classes accessible worldwide to home cooks at any skill level. The platform represents location freedom (something he explicitly values for future travel ambitions) while serving people who want to "make better meals, save money, and actually enjoy their time in the kitchen."

His teaching philosophy stems from decades of observation about what actually works. He describes his classes as "fun, informative and not intimidating" because "a learning environment that is entertaining will equal optimal results." This isn't theory - it's distilled from years performing live cooking shows and teaching in-person classes where he watched real people either engage or shut down based on how material was presented.

He goes on to say "Teaching isn't just about knife skills or sauce technique - it's about removing fear, building confidence, and helping people trust themselves."

PERSONAL LIFE AND FUTURE VISION

 

Dez is "very happily married" with four children. He rides a Harley, loves whiskey, and although he values the career that he has built, "family is still number one."

His stated future vision involves travel with location freedom - specifically "cooking demos and whiskey tastings from around the world." This represents the logical extension of his core values: freedom, authentic experiences, teaching, and connection through food and drink.

This vision isn't retirement, but evolution - continuing to share what he loves with people who want to learn, just from different locations.
