Roll up your sleeves because we're making fresh pasta completely by hand!
In this live interactive cooking class, you'll cook alongside Chef Dez as we combine four incredible recipes into one restaurant-worthy dish: Handmade Cavatelli Pasta, fresh Parsley Pesto, a luxurious Pesto Cream Sauce, and Pan-Seared Tomatoes with Prawns.
Best of all, you don't need a pasta machine! Chef Dez will guide you through making an eggless semolina pasta dough from scratch, kneading it to the proper consistency, and shaping individual cavatelli by hand. You'll learn how to recognize when your dough feels right, why resting the dough matters, and how to shape those distinctive little pasta shells right on your countertop.
While our pasta dough rests, we'll make a vibrant homemade parsley pesto with roasted cashews, Parmigiano Reggiano, garlic, lemon, and extra virgin olive oil. We'll then transform some of that pesto into a rich and creamy sauce.
To finish the dish, we'll pan-sear grape tomatoes with balsamic vinegar before adding succulent prawns, creating the perfect topping for our freshly cooked cavatelli coated in pesto cream.
Throughout the class, Chef Dez will share professional tips, answer your questions, and help you master techniques you can use far beyond this one recipe.
